They say fine wine gets better with time and that saying also seems to be true for a winery in Canon City. The Winery at the Holy Cross Abbey has been in business for more than a quarter of a century.

One of their signature wines--the Wild Canon Harvest, uses grapes from local growers. They've gone from crushing three tons of grapes in one season to make that wine, to now crushing 35 tons of grapes. "We could expand and double our size and we still couldn't make enough wine for everyone that wants it," said Matt Cookson, Winemaker.

Including the Wild Canon Harvest, Cookson say the winery will make about 200,000 bottles of wines this year.
