A popular eatery in Monument re-opened Monday. The Coffee Cup Café in downtown Monument. The restaurant closed for roughly 3 months after the roof caught fire June 30.
Enough of the building was saved that owner Jeremy Diggins was able to rebuild. Between the money the restaurant received from the insurance claim and the ability to let his staff pick up extra shifts at another restaurant he owns, Diggins was able to hold on to many of his employees during the transition.
"I don't think it's sunk in yet because there are still so many little details to do," Diggins said of Monday's opening.
"I'm sure in another week or so it will hit me that oh this is over with, we're back to our daily routine again."
The café will host a grand re-opening party Friday, October 23 as a fundraiser for the Monument Volunteer Fire Department to say thank you for saving the restaurant. The Coffee Cup Café is located at 215 Front Street in Monument.
