Hot tamale! High schooler starts his own restaurant

JC Tamales & Deli is one of the newest restaurants in Canon City and it was started by a high school junior.

The JC stands for John Campbell, a junior at Florence High School. The restaurant is a result of a fundraiser that actually started as a bake sale, to raise money for an upcoming trip he is taking to Italy and Spain, "I talked to my parents about it and they said it was ok for me to go, but the problem was i needed to raise $4,300." says Campbell.

He earned the money he needed for his trip pretty quick and has had enough to actually give back to the community that loves his tamales, "He's made donations to Senior Fun Fest and the YMCA effort here in Canon City and to the Boys and Girls Club," explains his mom, Cathy.

The restaurant is run by John and his family, but only John knows the exact ingredients that make his tamales so good, "We have a special blend that wouldn't be a good idea to discuss."

One thing John is quick to discuss is his future, he says wants to expand into more Mexican cuisine and maybe a little bit of Italian too.

JC Tamales and Deli is helping other locals too, whenever possible they get their ingredients from local farmers and ranchers. The restaurant is located on Elm Ave. in Canon City, click here to get directions and see a full menu.
