Beef Tips with Mushrooms & Mederia sauce
2lb Beef tenderloin tips
1lb Mushrooms (portabellas, Shiitake, Crimini, etc), cleaned and cut
1 large Yellow onion, small dice
2 cup Madeira wine
3 cup Demi Glace
Salt, pepper to taste
In a large Sauté pan cook the beef tips and onion in the butter until the onion turns translucent. Add the mushrooms, Cook for 3 minutes. Add the medeira wine and allow cook on medium heat until wine is almost reduced. Add the Demi and cook for 5 minutes. Season to taste.
