Chicken Saltimbocca
6 8oz Chicken Breast (pounded flat)
2oz Fresh Sage (chopped)
6 Prosciutto Slices (1/2 ounce each)
3oz Olive Oil
Salt & Fresh Cracked Black Pepper
2c White Wine
Lay the chicken breasts on cutting board, season with salt and pepper. Place a piece of prosciutto on the chicken then sprinkle on the sage. Roll the chicken and put a toothpick through to hold together. Put the olive oil in a large sauté pan on high heat and sear the chicken on all sides, add the wine then place in a preheated 350 degree oven for 15-18 minutes or till the internal temperature reaches 160 degrees. Let the chicken rest for 5 minutes before serving.
