Savage Kitchen - Cliff House Lingonberry Coulis

Blackened Tilapia Lingonberry Coulis

4 8oz Tilapia Filets
1c Blackening Spice

1/2c Lingonberry Jam
½ c Port Wine
1/8 c Sugar
1/4 c Water

Heat large skillet over medium to medium-high heat. Sprinkle a little salt and pepper one side of fish and then coat with blackening spice to desired preference on both sides.
Place the fish in the hot sauté pan and cook fish for roughly 3-4 minutes per side: 7-8 minutes in total. Remove from skillet, tent with foil, and allow to rest for 3-5 minutes
Flame off Port
Place all ingredients into blender and blend until smooth.

Serve with your favorite starch and vegetable
