Savage Kitchen - Cliff House Mango Port Sauce

The Cliff House
Mango Port Sauce

1 Fresh Mango (diced)
1 Shallot (fine dice)
1/2c Port
1tbs Sugar
2tbs Butter

In a small sauce pan place the shallots and liquor and cook over medium heat being very careful because the liquor will ignite. Once the flame has gone out add the sugar and simmer for 5-6 minutes. Next add the mango and cook for another 5-6 minutes being careful not to overcook the mango. Fold in the butter just before serving.

Serve over grilled pock chops.
