Pan Seared Pork Chops
Fuji Apple and Cherry Cream Sauce
(yields 4)
4 Pork Chops (8oz)
1 Fuji Apple peeled and diced
½ c Dried cherries (rehydrated in water)
2 c Heavy Cream
2 oz Brandy
4 oz Vegetable Oil
Salt and Pepper
Preheat a medium sauté pan over medium heat.
Add the oil to the sauté pan. Season pork chops with salt and pepper and sear both sides. Place the pork in a preheated 350 degree oven and cook to 145 degree internal temperature about 10 minutes. Remove pork from pan and let rest. Pour off most of the oil and put the pan back on a medium flame and add the apples and cherries; sauté for 2 minutes then add the cream and simmer for about 10 minutes or until the sauce thickens. Place the pork chops on your plate along with your starch and vegetables. Pour the sauce evenly over the chops.
