SWEET POTATO DUCHESS
2 EA SWEET POTATO
2TBS BUTTER
1 OZ EGG YOLKS
1ts PUMPKIN SPICE
1TS BROWN SUGAR
SALT & PEPPER TO TASTE
¼ C INSTANT POTATOES
PROCEDURE
Bake potato skin on at 350 degrees until done
Mash in mixer to incorporate Spice, sugar, butter, egg and cream
Check consistency, if to thin add instant potatoes.
Place mixture in a piping bag and pipe rosettes.
Place rosettes in the refrigerator.
Cook in a preheated 350 degree oven for 20-25 minutes
