White Balsamic Soubise
1 Medium Yellow onions rough cut ends and skins removed
1 qt Heavy cream
1/8 c white balsamic vinegar
1. In thick bottom sauce pot add onions and butter and sweat onions till translucent do not overcook.
2. When onions are translucent add cream and bring to a light boil and reduce simmer and cook for 15-20 minutes.
3. Remove from heat and blend with hand blender for 5 minutes.
4. Strain through chinois and add white balsamic to finish.
