SMOKED SALMON PASTA
1 lb Salmon
2 oz Mirin
1 ts Dill(dried)
1 tbs Liquid Smoke
1 ts Lemon Pepper
Salt and pepper
1 lb Lemon Pepper Pasta
1/4c Diced Shallots
1qt Heavy Whipping Cream
PROCEDURE
Preheat oven to 350 degrees. Mix mirin, liquid smoke, dill and lemon pepper in a small bowl. Place salmon in a small cake pan and pour the liquid over making sure to coat well. Put salmon in the oven for 12-15 minutes or until cooked thru. Cool in refrigerator.
Cook pasta in boiling water. When pasta is 4 minutes from done sauté the shallots in olive oil, then add the cream and bring to a simmer. Crumble the salmon into the cream and continue to simmer. Strain the pasta when done and add to the cream. Serve immediately
